THIS IS WHAT WE CAN LOOK FORWARD TO THE FIRST THREE MONTHS OF 2011 from the Wild:
*Fresh Black Winter Truffles:
Will be in their peak ripeness from mid January to mid to end of March. Either from France or Spain.
*Black Trumpets:
The best ones, Northern Californian, have started. Season could last beyond March, if we are lucky.
*Chanterelles:
The Oregon season is almost over, but all the rain and snow in Northern California is promising a good season from mid January hopefully through March.
This variety is much larger than the Oregonian, but they are very aromatic and good tasting. Best for slicing etc, due to sometimes can be as large as a head of broccoli.
*Hedgehogs (Pied de mouton):
Until end of March or beyond.
The small variety (about 1" diameter caps). A great substitute for small button chanterelles, which will not be available until the ones from Morocco will come (February). The hedgehogs pleasant fruity mildly sweet taste makes it compatible to same foods/dishes as the chanterelles.
*Yellow foot chanterelles:
Available mid to end of March.
Also a good substitute for small/button chanterelles.
Same flavor as the regular chanterelles minus the apricot flavor. In other words not as sweet. Since they are naturally pretty wet, ours are always fan dried to hopefully perfect moisture content.
**All our fresh cultivated mushrooms, fresh Heart of palm and lilybulbs are as always available.
